This is a fabulous example - luscious but fine, with a long finish. Organically grown grapes are manually harvested, then gently pressed, and left to ferment with indigenous yeasts. 50% of the wine is fermented in enamelled steel tanks, and 50% in oak vessels of varying sizes, all of which are at least five years old.
