His mission at Dominio del Águila is to protect the indigenous vines, some planted over a century ago, including old vine Tempranillo and white varieties, from being replaced with more productive Tempranillo and fashionable international varieties. The Picaro del Aguila is a co-ferment of Tempranillo with small quantities of Garnacha, Bobal and Blanca del Pais, and is an excellent introduction to the style of Jorge's wines.
