From the "Master of Xinomavro", Apostolos Thymiopoulos, this lesser known cuvee is a thrilling exploration of the grape grown at higher altitude, producing an especially elegant, fresh and refined style. The general Naoussa region has a warm continental climate, tempered by the cooling winds coming from the Vermio mountain or from the sea. The higher "Naoussa Alta" vineyards that these grapes are sourced from are generally cooler and enjoy a greater diurnal range (temperature differences from day to night) during ripening season, which is brilliant for tempering sugar accumulation and retaining acidity - the giver of freshness.

This has a delightfully pure fruit profile with juicy strawberry, ripe cherry and tart cranberry, plus aromatic floral and herbal notes, and a touch of umami tomato. On the palate it has a medium to light body, crisp acidity, and moderate but juicy tannins, with those red fruit flavours interlaced with fresh aniseed/fennel, black tea and sweet spices.

Apostolos Thymiopoulos has emerged as one of the leading figures in modern Greek wine, widely regarded as a master of Xinomavro. Building on generations of family grape growing, he has transformed the estate into a benchmark producer dedicated to expressing the full potential of this indigenous variety in Naoussa.

After studying oenology in Athens, Apostolos turned his focus to elevating Xinomavro, a grape known for its deep colour, high acidity, firm tannins and remarkable ability to reflect terroir. His breakthrough came with the release of Earth and Sky (Ghi Kai Uranos), a modern classic that demonstrated the grape’s capacity to rival fine expressions of Barolo in both structure and ageing potential.

Viticulture at Thymiopoulos is organic with biodynamic principles, reflecting a commitment to sustainability and minimal intervention. In the winery, fermentations are carried out with wild yeasts, extraction is gentle, and ageing takes place in large, neutral oak vessels. This approach ensures that each wine is a transparent expression of its vineyard, vintage and variety.

Through a combination of thoughtful vineyard practices, sensitive winemaking and a clear focus on terroir, Apostolos Thymiopoulos has established his estate as a leading ambassador for Naoussa and Xinomavro, producing wines of authenticity, precision and increasing international acclaim.
