One of the most iconic Assyrtikos out there, and with good reason. Spyros Chryssos is owner of some of Santorini's best and oldest vineyards and this single vineyard Nykteri hails from the 100 year old vines of the Louros vineyard, made famous by the late Haridimos Hatzidakis' bottling (with grapes supplied by Spyros).

The winemaking is inspired by the historical roots of Nykteri. The grapes are harvested at dawn, whole-cluster fermented with native yeasts, and spontaneous fermentation takes place in 500-liter oak barrels, where the wine remains for 7 months on fine lees.

Deep and complex, with impressive mineral presence, brilliant salinity, and refreshing citrus acidity, it is also exceptionally rare - only 650 bottles are produced in each vintage.

Santorini’s Assyrtiko wines have become world-famous, and therefore also big business. Spyros Chryssos remains a true vigneron and one of the few to exclusively farm his own vineyards, and to make his own wine, his way.

He is fortunate to be a fourth generation grower, who has inherited old Assyrtiko vines in some of the best sites on the island. The way he works these vines makes him a deserving custodian of such hallowed material. Inspired by the pioneering Haridimos Hatzidakis (a relation), he is strictly organic in the vineyard, ferments only with wild yeasts, and keeps sulphur levels low. This is rare on Santorini and it makes Spyros’s Akra Chryssos wines some of the purest and best examples of old vine Assyrtiko in the world.

Drink these wines, and you get all that’s great about Santorini Assyrtiko, and more. There is the saline, mineral quality, the power, and the obvious ageing potential. But thanks to the way they are made, there is also an extra dimension - an open texture and an approachability that marks them out as very special.
