This is a fantastically expressive, super terroir focused, delicious Pinot Noir. Timo Mayer is a big fan of whole bunch pressing, which he pulls off with great aplomb in the Dr. Mayer, his most recognised label.  It has ethereal yet intense, juicy, crunchy strawberry and cherry fruit layered through with attractive herbal sappiness, peppery earth and freshness. Grown on the steep slopes of his "Bloody Hill" vineyard, this is Yarra Valley at its best, from one of its most legendary winemakers, who happens to be German born. All his wines are super sought after and small production, and not to be missed.

The twinkly eyed, charismatic, wild-bearded Timo Mayer wins over anyone who meets him with his infectious enthusiasm, irreverent, gently rebellious energy and straight talking charm. He moved from Germany to Australia years ago, studied wine at Wagga Wagga and then established his own winery in the Yarra in 2000.

His belief that wines are made in the vineyard and he avoids excessive interference in the natural winemaking process, and the wines are unfined and unfiltered to show the true expression of the land.

His mantra started as "bring back the funk" because he decided that as a small family winery their point of difference, compared to the growing number of big company wineries making overly polished, new oaked wines, was to embrace attractive faults that more naturally made wines display.

He loves talking about "stalky sh**", and is a big fan of whole bunch fermentation, though manages to achieve great precision and cleanness, sensitive to avoiding too much stalk influence, whilst extracting all the juicy, crunchy fruit of whole berry ferments.
