Like the Dr. Mayer Pinot Noir, this is all estate fruit from the Bloody Hill vineyard, and is also whole bunch fermented. It is a brilliant Syrah, with a perfumed floral and dark fruit profile, with liquorice and pepper, and superb balance of voluptuous body, chewy tannins and fresh acidity.

The twinkly eyed, charismatic, wild-bearded Timo Mayer wins over anyone who meets him with his infectious enthusiasm, irreverent, gently rebellious energy and straight talking charm. He moved from Germany to Australia years ago, studied wine at Wagga Wagga and then established his own winery in the Yarra in 2000.

His belief that wines are made in the vineyard and he avoids excessive interference in the natural winemaking process, and the wines are unfined and unfiltered to show the true expression of the land.

His mantra started as "bring back the funk" because he decided that as a small family winery their point of difference, compared to the growing number of big company wineries making overly polished, new oaked wines, was to embrace attractive faults that more naturally made wines display.

He loves talking about "stalky sh**", and is a big fan of whole bunch fermentation, though manages to achieve great precision and cleanness, sensitive to avoiding too much stalk influence, whilst extracting all the juicy, crunchy fruit of whole berry ferments.
