Whilst there is a lot to be admired about the concentration and depth that old vines can bestow, there is also undeniable charm in a blushingly pretty, vivacious beauty like this one - but also plenty of complexity. It's the purity of fruit - all very primary, luscious, fresh yet poised - that makes wines like this just lip-smackingly good. Apostolos Thymiopoulos is the Master of Xinomavro and knows not to do too much with this fabulous grape whose natural facets (Gamay meets Nebbiolo, with lovely red fruit, but some tannic grip) should be celebrated in their purest form. Such great value for such a delightful wine.

Apostolos Thymiopoulos has emerged as one of the leading figures in modern Greek wine, widely regarded as a master of Xinomavro. Building on generations of family grape growing, he has transformed the estate into a benchmark producer dedicated to expressing the full potential of this indigenous variety in Naoussa.

After studying oenology in Athens, Apostolos turned his focus to elevating Xinomavro, a grape known for its deep colour, high acidity, firm tannins and remarkable ability to reflect terroir. His breakthrough came with the release of Earth and Sky (Ghi Kai Uranos), a modern classic that demonstrated the grape’s capacity to rival fine expressions of Barolo in both structure and ageing potential.

Viticulture at Thymiopoulos is organic with biodynamic principles, reflecting a commitment to sustainability and minimal intervention. In the winery, fermentations are carried out with wild yeasts, extraction is gentle, and ageing takes place in large, neutral oak vessels. This approach ensures that each wine is a transparent expression of its vineyard, vintage and variety.
